Recipe: Vegan Snacks
ALmond or Sunflower Oatmeal Cookies
Ingredients
- 2 cups whole wheat flour
- 2 cups rolled oats
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 cup brown sugar
- 1 cup almond or sunflower butter
- 1/2 cup molasses
- 3/4 cup vegan milk (rice, hemp, almond...)
- 2 teaspoons vanilla extract
- optional ingredients: carob or chocolate chips
- crushed walnuts
Instructions
- Preheat the oven to 350 degrees F.
- In a bowl, mix the flour, oats, salt, sugar, and baking soda
- In a separate bowl, mix the remaining ingredients (minus the optional ingredients)
- Combine the wet and dry until fully mixed. The dough should be super moist and thick
- Add in any chocolate chips or nuts
- Scoop out 1 tablespoon-size portion of dough, roll and place on a cookie sheet
- Bake for 8 - 12 minutes, until the cookies have spread, and the bottom is not burnt!
