Salsa Fresca
Ingredients
- 2 C ripe red tomatoes, seeds removed & coarsely chopped
- 1 clove garlic
- 1 or 2 jalapenos, stemmed & seeded
- 1 T fresh cilantro leaves
- 1 T fresh lime juice
- 2 T salad oil
- sea salt to tastel
Instructions
- In a blender combine the garlic, onion, chillies, cilantro and half of the tomatoes.
- Whirl until finely chopped.
- Add the oil, lime juice and the remaining tomatoes and whirl just enough to combine.
- Salt to taste.
- Will keep refrigerated for only 2 days.
