Recipe: Vegan Pie
Shepherd’s Pie
Ingredients
- 4 large potatoes
- 1 T margarine
- ½ cup soy milk
- ½ t salt
- 1 T extra virgin olive oil
- 2 onions, chopped
- 1 large bell pepper
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 cups mushrooms, sliced
- 4 large tomatoes, diced
- 2 cups kidney beans, cooked and drained
- ½ t black pepper
- ½ t paprika
- 2 T soy sauce
- Dice the potatoes, then steam over boiling water until tender. Mash with soy milk, margarine and salt. Set aside.
Instructions
- In a large skillet, sauté the onions, pepper, carrot and celery in oil for 3 minutes over medium heat.
- Add the mushrooms, cover the pan and cook an additional 7 minutes, stirring occasionally.
- Add the tomatoes, kidney beans, paprika, pepper and soy sauce, then cover and cook 10-15 minutes.
- Put the vegetables into a 9x13 inch baking dish and spread the mashed potatoes evenly over the top.
- Sprinkle with paprika.
- Bake at 350o for 25 minutes.
