Unique Philadephia prison program diverts 685 tons of food waste a year into compost and trains inmates to farm winter squash, peach and fig trees, eggplant, and watermelons organically with the first City-run captive food waste composting program . One ton of food waste per day from 2,000 inmates adds up to more than the prison system could use on its own.
