Teff is a gluten-free grain with a mild flavor, that’s been around for over 4,000 years. Grown primarily in Ethiopia it boasts a long list of health benefits; about the size of a poppy seed, colored variously from white and red to dark brown. Technically the seeds of ‘Eragrostis tef’ a grass, widely used to make Injera (sourdough flatbread.)
